Cow Parsley – Leaves like a fern, this plant is usually not found in a garden and more commonly on the roadside.
As with all plants, the first and main root is a tap root. Cow Parsley’s tap root can regrow an entire plant if damaged, so snapping off the visible plant will not remove the ‘weed’ from your garden. The only advice is to dig down deep and remove it all!
Can be mistaken for Wild Carrot (yes, there are wild carrots out there too!), but more commonly used as a mosquito repellent (apparently).
Young leaves are edible, however it looks just like it’s very poisonous cousin Hemlock…so best avoided.
